I was flying solo tonight and didn’t want to put much effort into dinner, so I threw together last night’s leftovers and it was delicious!
Cheesy cous cous (A gift from Mom Julie from World Market!) paired with a berry/spinach salad! I got my fill of cheese, carbs and FRUIT! Man, the berries have been amazing lately.
Drizzled on top of the salad was Olive Oil and a Blueberry Balsamic Vinagar (also a gift from Mom Julie!)
Ohhhhh man. These are not going to last long. The Blueberry Vinegar was phenomenal. Such a great blueberry taste that DEFINITELY cuts through. It’s more sweet than tangy and I LOVED it.
I’m told they both came from Amphora Nueva in Berkeley, California. If you’re in the area, you HAVE to try it. We’ve got a few other flavors to try too (Espresso and Cranberry Pear!), and now I can’t wait since I know what great quality they are. I may never go back to bottled salad dressings again!
