North Carolina Zoo!! November 22, 2009

I went to North Carolina this weekend to visit my friend Erika and her husband Timmy. It was so great seeing them and their family. Even though I only see Erika once or twice a year, it’s always like no time at all has passed when we’re together. She just cracks me up. Thanks for a great weekend!!

I was only there for 48 hours, so we made the most of our time there. It was an awesome balance of conversation,exploring and enjoying the east coast fall weather. 

On Saturday, we went to the North Carolina Zoo!

Bald Eagle. It was actually pretty cool to see one this close. I felt so American!

A Polar Bear? Poor Guy. He was totally out of place here. I kinda felt bad. He looked so sad and lonely. And for the record, mud is NOT the same as snow. He needs a bath!

$1,000 towards Dana Farber!!! November 17, 2009

Wow, I can’t believe it. With your help, I’ve raised over $1000 so far for the Dana Farber Institute!!! That’s $1,000 closer to getting me over the Boston Marathon Finish line, and $1,000 closer to a cure for cancer. Thank you so much!!

 

 

I’ve got more of an update coming soon! But in the meantime, thanks for your support!

I need to start remembering to bring my camera with me more places. I always want to update my blog, and I forget that I don’t have my camera. And what’s a blog without pictures, right?

I just want to take the time to thank all of my generous supporters of the Dana Farber Marathon Challenge. I am so humbled by all the people who have supported me so far –both financially AND emotionally. I hope you all know what a difference your contribution is making. It is saving LIVES. I will be running the Boston Marathon both for personal glory….and to help Dana Farber continue their amazing journey towards finding a cure to cancer.

A semi-healthy recovery lunch. November 8, 2009

I wanted something savory and filling for lunch today. I notice that sometimes when I try to eat healthy, I end up craving, starving and grazing my cabinets.

Today, I found the perfect solution. Behold the “Asparagus Risotto in an Acorn Squash”. YES!

Oh man, this was the most delicious lunch I’ve had in a LONG time. I cut an acorn squash in half, took out the seeds and microwaved it covered for 8 minutes (per the label on the squash). All kinds of squash are totally in season now, and are pretty cheap, filled with fiber and really healthy.

Then I used a half a bag of  Trader Joes “Asparagus Risotto” and stuffed the squash with it. It was totally fun to eat, and satisfied my stomach. I’m typing this now in pure bliss. I love the feeling of being full, knowing it was body-loving food that filled it. 🙂 I have a feeling this is going to keep me full all afternoon. That’s the power of Squash.
