Last night, we cooked up another one of our Dream Dinners meals.

This one was the ‘Chicago Style Chicken’, and it was amazing. So much flavor, and so easy to make. I joke with other healthy food bloggers that I don’t ‘cook’…instead, I ‘assemble’. But I’m darn good at it. Winking smile

I cracked open a bottle of wine (direct from Costco’s shelves). This was a Riesling and it was fabulous.

Enjoyed along side my Easter Bunnies. I wait all year for them to come out and play!

The rest of the night, we did some more office work. I’m converting my entire music library from ITunes to Windows Media Player. It is such a painstakingly long process. We got a home server, where we can access all of our music anywhere in the world… but it all has to be converted first.

Mac & Cheese, but not! March 24, 2011

I (really) like Trader Joe’s Sweet Potato Gnocchi. It’s easy and delicious.

If I was by myself, I could easily eat that whole package. But that’s probably not a very good idea. Instead, I took some cues from Amanda and Andy and decided to bulk it up with veggies and split it among two meals. This is why I like to hang around with Smart People.

The gnocci has a butter and sage sauce, but when it’s heated up, the gnocci kind of gets a little mushy and it totally tastes like Mac & Cheese.

Mix it with some crack Frank’s Red Hot and you’ve got yourself a meal. MMmm!

We go through hot sauce like nobody’s business, so we stopped fooling around with those little bottles. Go big or go home.

Now I’m stuffed. And luckily I have a great lunch to look forward to tomorrow. Winning!

 

Blogger Meetup: Pizza Party! March 21, 2011

Saturday night, Kaitlin hosted an LA Blogger meetup at her place and it was pretty awesome.

The group included Kaitlin, Amanda and Andy, Katherine, and Melissa .

And in true Blogger Fashion, the food was amazing.

We had a make your own pizza concept, with no topping spared!

Katherine is a pro and taught us all how to properly stretch out the dough (the key is to keep adding flour)!

And spreading olive oil on the dough before the sauce and toppings makes it crunchy! YUM!

We made four mini pizzas to share. They were all gorgeous. I love when food looks like art.

Cabbage Soup March 20, 2011

With all this talk of St. Patty’s Day cabbage lately, I realized I was craving it! On a whim, I picked up this from the grocery store this week.

Irish Stew Mix! I had no idea what to do with it, but it looked good, so I bought it.

I googled recipes for “Cabbage Soup” and found this one from All Recipes. It only took about 30 minutes to make, and it was totally worth it.

We ate al fresco. Nothing like a warm soup on a chilly day!

On the side, I made some biscuits. It just seemed right.

Luck of the Irish Cupcakes! March 17, 2011

This is not a food blog, nor do I claim it to be so. It’s pretty obvious that I have absolutely no creative cooking skills what-so-ever. But that doesn’t prevent me from seeing amazing recipes on other great food blogs and recreating them myself.

Today’s culinary adventure comes from Green Lite Bites (who had a baby today, by the way!!) She posted a great recipe for green cupcakes! Erika and I had a dinner party tonight, and these were the perfect dessert for St. Patrick’s Day!!

But here’s the kicker…. the recipe calls for a box of cake mix, some applesauce and this magic ingredient:

A whole bag of spinach!

Ok, I know, sounds gross… but trust me on this one. Roni doesn’t steer you wrong.

You puree the spinach with the applesauce for a while in the food processor:

Yep. A whole bag! Pregnant ladies need their nutrients!

Then you mix the green mixture with a box of cake mix… and stir, baby, stir!

I know, I agree, it sounds gross. But I did some batter sampling, and I can tell you that all I tasted was vanilla.

We used mini cupcake tins to make bite sized treats.

It’s so much fun baking with friends!

They came out of the oven perfect! They even rose up like normal cupcakes do.  We dyed our frosting green too (for the record, frosting=unhealthy… but I could eat a jar of frosting with a spoon, and in my world, cupcakes need frosting!)

I experimented with a piping tip to make them look all pretty, I need a little practice though.

We tasted them and they were pretty rocking. They were rich and moist, with lots of vanilla flavor.
