Walking and Eating…. June 9, 2011

As my mother who lives 3,000 miles would say, “Where have you been?” (Said in a ‘I’ve been looking for you’ tone!)

Oh, I’m here, it’s been a busy week! Here’s what I’ve been up to!

1.) Walking! I’m in a pedometer challenge, and I’m determined to win! Or at least place in the top three! It’s not easy when you’re also competing against New Yorkers! Those guys walk EVERYWHERE! I’ve been walking in the morning and at night. And hiking three miles almost everyday at lunch time! (I aerobically walked 9 MILES yesterday! What?!) It’s all about squeezing it in when you can!

2.) And that includes walking to the grocery store too! I bought myself some pretty flowers this week!

3.) Irving’s mom was in town this week! We had fun hanging out! And she brought goodies!! Thanks!!

4.) Irving whipped up his mom’s famous meatballs (with fresh beef from Harris Ranch!)

5.) I cooked! I actually found a recipe, shopped for ingredients and COOKED. Alert the press!

I cooked up Jenna’s Greek Stoup! <— Click over there for the recipe! Instead of Alphabet pasta, I opted for Orzo to stick with the Greek Theme.

6.) I got The Reader on Netflix and me and Julie watched it last night. Probably not the best movie to watch with your mother-in-law, but hey, if I can see Zumanity with my sister-in-law, we can do anything, right? I really loved The Reader. It was just a good story with an interesting plot. I actually can’t believe we’ll be going to Auschwitz later this year.

7.) And now, our guests have left, and I came home today to find that Irving went to Costco. And he bought me the BEST thing you can possibly by at Costco:

I LOVE PICKLES!!!!!! I actually finished a jar today! Good timing, babe!

8.) More walking…. I’m walking to Erika’s place soon so I can see the baby again! I am so excited to have a new baby to play with!!! She’s the CUTEST thing, and only four days old today! So excited!

 

Homemade Tzatziki Sauce! June 1, 2011

I love Mediterranean food. I am part Lebanese and grew up eating all kinds of Arabic food. (Remember Zartar?) And I love hummus and chickpeas, but for some reason, I don’t like falafel. Maybe it’s the spices? But Irving really loves it and we picked up some fresh falafel at the farmer’s market this week. He wanted to make a sandwich with some tzatziki sauce, so instead of buying it for him, I decided to try my hand at making it fresh!

I based it off a few recipes online, but in the end, decided to wing it myself.

I just put some Greek yogurt, cucumber, olive oil, lemon juice, dill, salt and pepper in my food processor and give it a whirl. (Those are my favorite recipes: take some ingredients and mix em’ together.)

[When Irving found out I was making this, he FREAKED out when he thought we didn’t have pita in the house for his beloved falafel sandwich. Don’t worry, situation averted. Pita has been procured.]

It came out pretty good. A little runny (maybe it didn’t need the olive oil?) The real test will be when Irving tastes it on his sandwich tomorrow at lunch! Crossing my fingers!

And while I was cooking that, Irving was making homemade matzo ball soup. The fun just doesn’t stop around here, let me tell you!

We also just got back from our 3 mile walk with a stop at the bank and Trader Joes. And now it’s 9 o’ clock. How does that happen?!

 

Choo Choo! The Healthy Train! May 24, 2011

Remember the time I worked out with a trainer and lost 20 pounds before my wedding? Remember I used to count calories, drink protein shakes and go for daily runs? That healthy lifestyle now feels like a distant memory to me now. What Happened? Marriage happened! A life of gluttonous eating, world traveling and a profound contentness happened. And all my healthy habits vanished with my single-dom.

Last week, at a blogger event, the girls asked me when my “tipping point” was for healthy living. I kinda stared back dumbfounded. I said that I really haven’t hit my tipping point yet. But that’s kind of a lame excuse. I’m not living healthy because I haven’t had a turning point yet. What? The turning point is NOW. Right here. This is my tipping point.

Well, can you hear that? The rumbling in the distance? The fluttering of birds overhead? The faint choo-choo-ing of an on-coming train? It’s the healthy train, and I’m jumping aboard. For real this time. I’m going to DO this. And I have a plan.

  • I now have a healthy living coach who made a plan for me, and will call monthly to check in and make sure I’m on track for reaching my goals.
  • At least 30 minutes of cardio most days. I told her realistically, I will aim for 6 days a week. 30 minutes isn’t that hard.
  • When I get my pedometer, I’m aiming for at least 10,000 steps per day (about 5 miles)
  • Begin a real strength training plan, starting at once a week until the soreness wears off.
  • Eat more whole foods and less packaged, processed and frozen things

I am inspired daily by the blogs and articles I read. And it’s time to act on that inspiration. I will be charting my activity daily on the blog!

Dinner tonight consisted of whole foods! I am very aware of the lack of protein in this meal. That is definitely something I’m working on nutritionally.

First up, I cut up some cute little potatoes:

And tossed them in a bag with some olive oil, parsley, dill and some other stuff:

Springtime Chicken March 30, 2011

Last night, we cooked up another one of our Dream Dinners meals.

This one was the ‘Chicago Style Chicken’, and it was amazing. So much flavor, and so easy to make. I joke with other healthy food bloggers that I don’t ‘cook’…instead, I ‘assemble’. But I’m darn good at it. Winking smile

I cracked open a bottle of wine (direct from Costco’s shelves). This was a Riesling and it was fabulous.

The rest of the night, we did some more office work. I’m converting my entire music library from ITunes to Windows Media Player. It is such a painstakingly long process. We got a home server, where we can access all of our music anywhere in the world… but it all has to be converted first.

Mac & Cheese, but not! March 24, 2011

I (really) like Trader Joe’s Sweet Potato Gnocchi. It’s easy and delicious.

If I was by myself, I could easily eat that whole package. But that’s probably not a very good idea. Instead, I took some cues from Amanda and Andy and decided to bulk it up with veggies and split it among two meals. This is why I like to hang around with Smart People.

The gnocci has a butter and sage sauce, but when it’s heated up, the gnocci kind of gets a little mushy and it totally tastes like Mac & Cheese.

Mix it with some crack Frank’s Red Hot and you’ve got yourself a meal. MMmm!

We go through hot sauce like nobody’s business, so we stopped fooling around with those little bottles. Go big or go home.

Now I’m stuffed. And luckily I have a great lunch to look forward to tomorrow. Winning!
