Delicious Dinner + Dessert March 16, 2011

Tonight, my friend Janet came over for dinner. I originally promised her a crockpot recipe, but I couldn’t get my act together in time to set it this morning. So instead, I scoured the blog world for an easy healthy recipe for us to enjoy. Luckily that’s not too hard to do. I decided on Stuffed Peppers with Tomato Basil Cream Sauce from How Sweet It Is (her blog is amazing, by the way!) I went to the grocery store and got all the ingredients…. except for the peppers!! How can you make stuffed peppers without the peppers? So I had to make a second trip. Lame!

I never noticed how beautiful the texture of an onion can be. I’m starting to love this photography thing! Though I’m still having an issue with low light… any suggestions? When the light is low, the picture is blurry!

I followed the recipe exactly (except I didn’t have Parmesan cheese. They came out AMAZING.

Janet made some twice baked potatoes to go with it. They were incredible. We ate them with ketchup (of course! I’ll eat anything with ketchup). She says the secret is adding lots of cheese. You can’t go wrong with cheese.

For dessert, I whipped up my favorite Banana Soft Serve. This time, we blended in some chocolate peanut butter and Nutella and topped with fresh strawberries. It tasted like a Reeces Peanut Butter cup (only better…. and way healthier!)

We spent the rest of the night scrapbooking. I promise to post my scrapbook pages when the book is complete!!! Night!

 

Houseparty: Kraft Philadelphia Cooking Crème (And a Giveaway!) March 13, 2011

Last night, we had some friends over to enjoy an evening of cooking, dining and laughing, courtesy of Kraft and Houseparty.
They sent us some goodies, including their new Philadelphia Cooking Crème to cook up some delicious meals.

We would be cooking two recipes: Chicken Bruschetta Pasta and Creamy Chicken and Broccoli Casserole.

They also sent this Todd English Pan to test out… and it was pretty awesome.

Once everyone arrived, we (the girls)  got started on our first recipe:

Danielle took one for the team and cut up all the chicken. That’s my least favorite cooking task.

We used the ‘Savory Garlic’ flavor in the casserole.

While the casserole was in the oven, Erika manned the stove and cooked the chicken for the next dish!

To finish off the Bruschetta Pasta, we added in the fresh basil.

Then the Casserole came out of the oven… slightly undercooked. If you make this recipe, make sure you cook the chicken BEFORE putting it in the oven, because ours definitely wasn’t done.

We paired our two savory dishes with a simple salad to lighten it up a bit. I thought they were pretty good. Next time, I’d make the Bruschetta Pasta with the Savory Garlic instead of the Original flavor.

For dessert, we had an Oreo Ice Cream cake and a lemon tart.

Cooking in Bulk! January 15, 2011

We all know by now what a challenge it is for me to meal plan and cook rounded meals consistently. I always have one or two meals I’m excited about per week, and the rest of the time, it’s thrown together or we have missing ingredients. I’m hoping this will all change with time when we start a family someday. (Is there hope?)

That’s one of the reasons why we keep going back to Dream Dinners. It’s a great concept: you go in and prepare 36 servings of meals in about two hours. And you go home with a freezer full of dishes you created yourself, all ready to go when you want them. Sounds good to me.

We’ve been about four times in the past and for us, it’s definitely worth it. You know they’ll have everything you need to make each recipe work.

When you get there, they give you aprons, but we prefer to bring our own. It’s just more fun that way.

Dinner Challenge September 28, 2010

You might (or probably not) be wondering what happened to the daily dinner challenge…

Well, my friends, the streak is over. I didn’t quite last 14 days, but I had 8 amazing home-cooked meals that I’m proud I was able to make by myself. This was a big deal for me, since I really didn’t think I liked to cook.

But I learned a lot of new things and I’d consider the challenge a success.

  • I found out that if I have a recipe and all the ingredients, I actually enjoyed cooking.
  • It gave me and Irving time together in the kitchen to unwind
  • I’m actually not as starving after work like I thought I was.
  • If I had a recipe, even grocery shopping wasn’t so bad
  • I’m actually a pretty decent cook if I follow directions
  • Once things were in the oven, I had time to clean the kitchen and I became even MORE productive than if I didn’t cook.
  • It makes me appreciate eating out more, it became a treat

As part of tonight’s I hate cooking dinner challenge, I made another recipe from my archive that I’ve been DYING to make.

Introducing… Sweet Potato Shepard’s Pie. I found this recipe on Tina’s ‘Trading up Downtown’ blog.

When I got home from work and started whipping ingredients out of the fridge, Irving said, “Are you sure you want to cook again tonight? You really don’t have to!” I said, “what, are you sick of my cooking already? It’s only day 7!” haha But I think he was just impressed that I am still going strong on the dinner cooking front.

Truthfully, I’ve been LOVING this cooking challenge. I’ve actually begun to enjoy it. Cooking is my time in the kitchen to unwind. Irving hooked our computer up to the tv in the kitchen, so he’ll come and hang out in there too and we have a blast spending an hour just catching up and getting some things done.

I found that when I have a recipe to follow and have all the ingredients I need, it’s actually pretty easy. I thought that cooking would kill my night and I’d have no time to get anything else done, but I’ve actually been MORE productive. I get the dishes done while things are in the oven, and a few other things here and there.

But I digress.. back to my pie!

Yesterday’s meal was meat-free, so I think Irving was happy to have a manly meal tonight. He really liked it.

Even though this recipe has paprika, Worcestershire sauce and salt and pepper, we both agreed it could have used some Frank’s Red Hot sauce or something to kick it up a notch. Next time…

And just for fun… I took Erika and Timmy’s dog out for a walk today. He’s so cute!
